How to enjoy a plate of rice and curry

A short guide to the everyday Sri Lankan meal, and how to order it well.

Rice and curry is not one dish but a spread: rice at the centre, and several small preparations around it. Understanding the shape of it makes ordering far more rewarding.

What arrives

Expect a dhal, one or two vegetable curries, perhaps a fish or chicken curry, a sambol, and a poppadum. Everything is meant to be combined in different proportions, not eaten in sequence.

On heat

Sri Lankan food can be genuinely hot. Asking for it milder is completely normal and no cook will mind. Coconut milk, curd and rice all take the edge off.

Vegetarian by default

Much of the spread is naturally vegetarian, so a meat-free plate is easy and never an afterthought. Say so when ordering, and mention any allergy clearly.

Breakfast is worth waking for

Hoppers, string hoppers, pol sambol and curd with treacle make a breakfast worth planning your morning around.
